I don't recommend moving, starting to homeschool an 11 year old girl and buying a 90 year old house all at the same time. Why? Because it's my life right now and it is crazy pants. <br />

In the Spring of 2016, we starting hearing about a specific job in a small town that would be perfect for us. A town that we have always wanted to live in. To get away from the big city would be a dream so we were pretty excited. <br />
Around that time, my daughter started struggling in school again. I could write another whole post on that but I'm trying to stay focused here. Long story short, she did well in a private school with two teachers and a smaller class but the next year at that same school was a totally different experience. So we were back to hours of crying and correcting every day after school. Anyway, I just couldn't take it anymore so we brought her home with us for me to homeschool just before the end of the year. It was the best decision some days......other days, not so much. </div>

We got word soon after that decision that the job was his and we started getting the house ready to put on the market. My girl learned all about selling a house along with school. Oh why didn't we fix all of those things in the house sooner so we could enjoy them?! But it paid off because the house sold in 2 days! <br />

We had a month or so before we could physically move out of the house so we kind of enjoyed it. The kids went to camp, we found our old/new house, and we decided to go ahead and go on our big family vacation. The movers packed up our stuff and we left the next day for the beautiful Smoky Mountains. But we were stress balls! We had a beautiful cabin WAY up on the side of a mountain but nobody slept well. We all tried our best to love being there, and we did most days, but the move was looming over our heads the whole time. We knew when we got back it would be a whirlwind because of the closing and having to really saying good bye to everyone. Intense emotions all around for sure. We're a military family that's used to moving but we were in that house and neighborhood for 8 years. Our kids grew up SOOOO much in that house and it was awful saying goodbye even if we were moving to our dream town near the river.<br />

And our new/old house? The 90 year old one? She's a beauty and the previous owners kept a lot of the original charm but some days that charm just equals OLD. And we aren't used to it. We had dreams of painting her up and loving downsizing but it's just so different here. I'll write more about this later but for now I just wanted to get where we are right now, up on this blog. <br />

I've missed this blog so much and have strayed away from so many things that I love. I've let my thyroid illness steal away so much joy and have let comparison creep in. I've made some tough decisions and some dumb decisions the past few years and I've had to let some things go..... BUT I'm still living! And I realized that what I have loved the most in the past is to write and share here on this blog. So I'm putting my focus back to this blog in hopes that I can create a spark of happiness back in my life. <br />

I had a good friend give me the advice about this blog years ago. I felt like the name Fit2feelbetter put me in a fitness box and that I couldn't ever branch out from it but she gently reminded me that we could all strive to be "fitter" in so many other areas of life. Not only physically fit, but emotionally, spritually, relationally, and financially fit. And she is so right. I'm excited to get back to my "roots". <br />

Needless to say, I'll be making it again! For a lighter version use olive oil and go easy on the cheese. I served this with a side salad and fresh pasta (found in the refrigerated aisles of the grocery store). <br />

Ingredients:<br />
1 egg<br />
2 T powdered Parmesan cheese<br />
1/2 cup Italian seasoned bread crumbs<br />
1 to 2 T of olive oil<br />
4 3/4 inch thick pork tenderloins or boneless pork chops<br />
1 24 oz jar of spaghetti sauce<br />
shredded mozzarella cheese<br />

Directions:<br />
Preheat oven to 350 degrees.<br />
<br />
Mix 1 egg with 1T of water in shallow bowl and set aside.<br />
<br />
Combine Parmesan cheese with bread crumbs in another bowl.<br />
<br />
Start heating up olive oil in a large frying pan.<br />
<br />
Dip meat in egg mixture; then dredge in crumbs. Brown breaded pork in the olive oil. <br />
Place in a greased casserole dish. Top with spaghetti sauce. <br />
<br />
Bake about 30 minutes. Top with grated mozzarella cheese and return to the oven for 5 minutes.<br />

I’ve thought about abandoning
this blog.<span style="mso-spacerun: yes;"> </span>I’ve been gone too long.<span style="mso-spacerun: yes;"> </span>Who cares and who reads anyway?<span style="mso-spacerun: yes;"> </span>But the thought of one person reading and
taking away something keeps me going.<span style="mso-spacerun: yes;">

personal and maybe even uncomfortable.<span style="mso-spacerun: yes;">
</span>But I know without a doubt that I’m not the only one going through hard

Christmas time was so fun and

a few days before Christmas when I was 16 and my Grandaddy passed away
unexpectedly.<span style="mso-spacerun: yes;"> </span>I will never get over
burying him the day after Christmas.<span style="mso-spacerun: yes;"> </span>He
was a rock in our family.<span style="mso-spacerun: yes;"> </span>It took a long
time to get over it.<span style="mso-spacerun: yes;"> </span>And now that I have
my own kids, I work SO, so hard to keep Christmas happy and to keep them from
being disappointed.<span style="mso-spacerun: yes;"> </span>But this year,
Christmas is different again.<span style="mso-spacerun: yes;"> </span>I wish I
could explain more but it’s not my story to tell.<span style="mso-spacerun: yes;"> </span>My own little family is fine but we are
feeling the weight of loss and heartbreak right now.<span style="mso-spacerun: yes;"> </span>And while we are hurting, I’m learning the
lesson again of the danger of making Christmas so perfect and unattainable that
nothing should break it.<span style="mso-spacerun: yes;"> </span>But the fact
of the matter is, I do try but it breaks.<span style="mso-spacerun: yes;">

body is broken with a thyroid disease that was painful and scary and still I

My husband and I have done all of the P90X workouts and have not been disappointed. Today is the day after my 3 Day Refresh! It's a new program that I picked up because for the last month or so I haven't felt myself and was sick and tired. Turns out (long story short), I was having thyroid issues. I'm feeling MUCH better now but after eating whatever I could because it hurt to swallow and a lot of medicine and antibiotics, I wanted to cleanse my system out. And just to let you know, I've worked hard the past few years to get to my ideal weight so I wasn't trying to lose weight. I wanted to feel better and give my nutrition the kick start that it needed. So the 3 Day Refresh was perfect for me because it was only 3 days. :) <br />

I chose to not give up my coffee totally but I did drink it black. Of course I didn't drink as much because lets face it, black coffee is no fun. Then, later on in the morning, a Fiber Sweep digestive health drink. </span><span style="font-family: Times, 'Times New Roman', serif;"> It was sweet and went down just fine. Just make sure you drink it up fast! </span></div>

For this, I just whipped up a simple salad of cucumber, cherry tomatoes, a little purple onion and a little avocado dressed with balsamic vinegar. (I thought this was fine but later found out it had sugar in in so next time I might just use red wine vinegar.) </span></div>

Drink at least half of your body weight in ounces and you'll be fine. Yes, I was peeing ALL of the time but I wanted to clean out, right? So for three days I could handle it. I even went shopping with hubby on day 3 and used the bathroom in REI 3 times. But who cares? I guarantee you that no one else did! </span></div>

<span style="font-family: Times, Times New Roman, serif;">1. This program so doable! My first day was the hardest and I know it was all mental. I went through all the emotions and excuses to quit! I don't really need this, no one will know if I finish, It's too difficult (which is wasn't!), etc. But I stuck with it because I announced to the world and to my healthy lifestyle FB page that I was doing this. I wasn't going to let anyone see me fail! I wanted to do this for me and for you to show that you can do it too!</span></div>

Yes, there were times that I got hungry and it wasn't time to eat yet. BUT, it forced me to slow down and evaluate if I really was hungry. Sometimes I was just thirsty and sometimes it was stress. I had nieces coming for the weekend and a boy that broke his hand on the last day! I could have quit but I kept going because honestly, what would have beer or a piece of my daughter's cake going to do for me? </span></div>

Like I said before, I wasn't trying to lose weight. I really wanted to concentrate on the experience and how I FELT and not the numbers this time. I was doing this with a friend at the same time and she said she could fit into her super skinny jeans for a girls weekend and was very happy about that. Yay for non scale victories!</span></div>

This may be a little late but I put together this collage for Christmas gift ideas to get children outside and moving. I think those stilts would be so much fun for an adult too! </div>

After thinking about it for a while, I decided this year that I was going to attach little challenges with our outside gifts. J-man is getting a new scooter and I think it would be fun for him to come up with obstacles courses using little cones or even drawn out with chalk. I might even think about ramps because he's getting pretty good. Roo is getting a bow and arrow set (help me!) because that is what she has wanted since summer camp. Hitting the target will be an obstacle in itself, but I think it would be fun to do a kids against parents competition. I've learned the hard way that creating competition between siblings is not the way to go. Make it between the kids and the parents and there should be less fighting and hurt feelings. (emphasis on should) My kids are usually pretty good at keeping themselves busy but over the Christmas break they might need a little bit of friendly competition to hold their interest longer.</div>

Thursday- Brinner (Breakfast+Dinner). We've been having this a lot lately. It's so easy and everyone eats it. I'll share my scone recipe soon. They aren't by any means healthy, but we top them off with a strawberry jam and greek yogurt mixture. We scramble some egg whites with a few whole eggs mixed in and serve everything with whatever fruit we have around.</div>

Before we left on Friday, I went to the store and was sure to buy some healthy snacks for the road. We had apples, easy peel oranges, nuts, sugar snap peas and some crackers. On our travels, we utilize Yelp to help us find healthier restaurants for eating out. We've found some really cute deli's along the way in small towns. We like to give them our business as well and leave feedback for other travelers. Another option is finding a grocery store. Get creative and build your own salads with pre-washed lettuce bags and little tomatoes or grab some whole wheat tortillas and fill them up with veggies and hummus for a wrap. You might have to pack a bag before hand with plates, cups and utensils but it will be worth it! We've also packed a cooler and eaten at rest stops. The kids can run around while we finish up. It can be an adventure but in the end, we've eaten healthier, felt better, saved money, and have some great stories to remember.</div>

I skipped a week of meal plans but that's alright because my meals weren't blog worthy anyway. We took a last minute trip to be with family so our plans got re-arranged and we at out a lot. This past week I was wrapping up the in-line skating unit with the 3rd and 4th graders at our elementary school. I also had a long overdue lunch with a friend and the Thanksgiving lunch with my daughter. A busier week than normal, where I'm not at home during the day, leads to easier meals.</div>

Monday: Stir fry- I love <a href="http://www.thesunnysideupblog.com/2011/01/random-pics-and-recipe.html" target="_blank">this</a> recipe from Erin. It's simple and full of flavor. I start with her recipe and then add water chestnuts, baby corns and frozen veggies to make it more of a stir fry. Don't forget the cashews because that is what makes the dish. Also, to keep the recipe on the lighter side, start with a small amount of sauce and add more if you need to.<br />

Tuesday: Google how to cook a spaghetti squash. For the sauce, brown Italian Seasoned ground turkey and add your favorite pasta sauce. One of my favorite simple recipes for Fall//Winter because the squash goes down in price. <br />

Wednesday: Easy pot roast in crock pot. Cut up some carrots and potatoes and put them in the crock pot, trim fat off of roast and place it on top of vegetables, sprinkle roast with one package of Lipton onion soup mix and water. Cook on low 8 to 10 hours. (I used the recipe on the back of the onion soup box)<br />

As I share these recipes with you, I'm realizing that they aren't as "clean" as they could be. I'll be working on finding new easier recipes that are using less processed and canned items. It's been really good for me to write these meals down and see a pattern. I'm thinking that it will be helpful to me, especially in the next few months, to write down what I eat for breakfast, lunch and snacks as well. Now I'm off to prepare for Thanksgiving. Anyway, the other night while meal planning, I got the crazy craving for kale and potato soup. I'd seen other recipes out there and decided it would be great for our new cooler weather. But most of the recipes out there call for heavy cream and bacon. I needed something a lot lighter than that. I actually found a recipe using milk instead and when I went to cook everything, realized that I had not saved it on the Ipad! This lead me to create my own recipe and it actually turned out pretty good. I have to note that I think my homemade chicken broth was the reason it tasted so good. <br />
<br />
Ingredients:<br />
2 large garlic cloves, chopped<br />
1 small yellow onion, chopped<br />
1 package of JennieO Italian seasoned ground turkey<br />
4 cups of homemade chicken broth<br />
10 fingerling potatoes or about 4 red potatoes, cut in 1/2 inch pieces<br />
1 cup of 2% milk<br />
4 cups of kale, with stems removed and torn in pieces<br />
<br />
First, saute the onion and garlic until browned and tender. Add the turkey and brown until done. Add chicken broth to the pot and bring to a boil. Add potatoes and simmer until they are tender. Add milk and heat through. Add kale and cook for a minute or two or until it is wilted. Season with salt and pepper as desired.<br />
<br />
The next time I make this, I'll experiment on adding some corn starch to thicken up the soup a bit. <br />

-In a pot, heat 3 cups of water and the veggies until all vegetables are cooked. <br />
-Add 2 Tbsp. regular miso and 2 Tbsp of chili miso to the pot and stir. <span class="Apple-style-span" style="font-size: x-small;">(You can play with this combo to make it spicier or more mild)</span><br />
-Add tofu and let sit for a minute to allow it to heat up. <br />

Note: We usually have celery and carrots on hand but not purple cabbage. When I buy the cabbage, I chop the whole thing up and then freeze flat it in one big bag. This was a crazy week! Daddy was out of town for a few nights and I was on my own. I contemplated not even posting about our meals but then I thought about how I want to be honest and intentional with this blog so below is the real deal. Here are the recipes (or in this case non-recipes) and how the week went down.<br />

Monday: I had Bible study in the morning and then spent too long on a lunch date so I ran out of time to get to the store. Note to self: Shopping on a Monday is not a good mix. Instead of rushing through meal planning and then rushing through the store, I decided to get Chick-fil-a for the fam after piano practice and wait until to the next day to prepare. I thought I was choosing the healthy salad at Chick-fil-A. I did not. Maybe it's just me and the fact that I rarely go through the fast food lines anymore, but I got all flustered and in a hurry and I didn't take the time to choose what I really wanted! Lesson learned. <br />

For lunch, instead of my quinoa salad, I simply toasted a piece of Ezekiel Bread and topped it with cucumber, grape tomatoes, kalamata olives and a little purple onion and feta cheese. Top it all with some balsamic vinegar for added extra flavor. </div>

I finished up the Alpha phase (first month) of Focus T25 and now I'm on to the Beta phase. I'm REALLY enjoying the shorter workouts. They go by fast and you are moving fast throughout the whole thing. It's taking me a while to get used to not having any breaks but sometimes I just pause the video to catch my breath and start up again. I've found that if you wait too long, by the time you've caught your breath, they have moved on to something else. So I pause because I don't want to miss anything and I want to get the most out of the 25 minutes that I am working out. </div>

2. Set of cutting boards ~ We use about 4 on a daily basis and I encourage you to have this many. Who wants to cut up veggies or fruit when the one cutting board you own is dirty? That alone would make me grab for something else. Also, I prefer these non-flexible ones because they are easier to clean in the sink. I run them through the dishwasher every other day or so. </div>

5. Immersion blender ~ Since it's <i>kind</i> of beginning to feel like Fall here in Texas, soup is on my mind. I've come across so many soup recipes that call for you to cook all of the ingredients and then add it to a food processor. I've burned myself too many times and finally picked up one of these at my local grocery store for cheap. Just blend up those ingredients while they are still in that pot. (And you don't have to clean a food processor!) I don't use mine too often so I'm not sure how it would hold up with more frequent use. <br />

So I'm just now getting the courage to write about the next two days of our Colorado trip (over the summer!). These days were thrilling and I was actually downright scared through some of it. </div>

We rented a jeep for two days. A jeep that would take us to some of the most amazing places I've ever seen. But with that came narrow roads, steep inclines, and raised heartbeats! The jeep trail that we did the first day was a bit long and really bumpy. But nothing too major. (That was day two!) Our day started off nice and calm at an old abandoned mine. This house obviously belonged to a wealthy family.</div>

I was happily in charge of the map that gave historical information about each spot along the trail. I still can't believe that the next spot was just a little dot on the map. Not too much information but the word waterfall is like a magnet to my hubby so we had to stop. And we couldn't just look at it from the nice overlook they provided. Nope. We walked <i>straight </i>down the crumbly trail to the base of the waterfall.<br />

This week was hard. J-man got upper and lower appliances in his mouth on Monday. Now starts our adventure with orthodontics. He has taken it way better than me. That night, with all the slobber in his mouth, he was making jokes about waking up in a pool of spit. Me? I would have been crying. I told him that he makes me want to be better and his quick response that I didn't have to be meant the world to me. I think it's a bit too early to celebrate getting them off? <br />

A few months ago, I accepted a volunteer leading position at my church in outreach. I was certain I got a clear answer to prayer about if I should do it or not. But the next day, the doubts and fears took over! I'm stretching and learning and praying like crazy. I had another meeting with my pastor yesterday and I've realized that it's way more about the people that I will be serving and the church I'll be helping. It's changing me and I'm not too sure how I feel about it! His question to me was "Why do you feel like you have to do it all on your own?" Um, because that's how I've always done it. My independence comes with a fault sometimes. <br />

And I know that it will help with my new job. If I take most of myself out of it and let Him do his work, all will be well. I'm clinging to this and to my new group of friends that I know will be helping me along the way! <br />

I'm also knee deep in house projects. (Isn't this why I started this blog in the first place?) We finished the music room (minus a few accessories) but it has left other rooms in shambles. So I'm off to get them worked on!<br />

I'm motivated now because we have completed several major projects in our house that I want to share. But the trip must be documented before I move on or I fear it will never get finished! <br />
After a nerve-wracking trip to Wally world in Durango, we drove on over to Silverton for the rest of our trip. To be honest, when we arrived to Silverton on our train ride I was nervous that we wouldn't have much to do in that teeny tiny town. But the drive there was one of the most beautiful drives I have ever experienced and I was wrong about not having anything to do.<br />

We didn't have much planned that day except for travel, unpacking, and exploring the town. (This is when I wish I had more pictures of the house!) As we were unpacking, a biker from on top of the mountain behind our house yelled down "WOLF!" and then took off. James quickly had the kids get inside and I had to stand guard. What in the world had we gotten ourselves into?! After speaking to some locals later that evening, we learned it was only Wolfie, the town dog. </div>

Wolfie chases bears and coyotes away in exchange for food and comfort from the locals. I actually felt safer knowing that he was around once we learned more about him.</div>

They "found" all kinds of minerals and gems to collect and sort. It was the best 14 dollars spent that day.</div>

The next morning the early birds (that would be Justin and I), sorted and classified all of the treasures found the night before. After the sleepy heads woke up we packed up our gear for our first hiking trip to Ouray. We had our sights set on a easy hike up to a waterfall. It so reminded me of our <a href="http://www.fit2feelbetter.blogspot.com/2011/08/california-dreamin.html#comment-form" target="_blank">Yosemite trip</a>. It's just amazing that you can see such beauty a short walk up from your car!<br />

And here is where the day turned for me. Do you see that drop off to the right of my husband? Do you see that rock right about their heads? Do you see how that gravely trail slopes down?! My heart is beating faster right now just looking at this picture. I was scared to death and this was not the only moment on this trip I felt this way. Let's just leave it at that for now.<br />

The rest of the day was filled with more waterfalls, a rain storm that kept us waiting to swim in the hot springs pool and picking up hitchhikers and taking them back to Silverton. We've never picked up hitchhikers before but it was such a blessing for us to help them and to have a serious talk about the dangers of drugs (she was clearly using) with our kids. Quite a day.<br />
